Late Summer Harissa Salmon & New Potato Traybake

Ingredients
- 3 fillets of salmon
- 2 cloves of garlic, crushed/thinly sliced
- 2 tablespoons of harissa
- Zest and juice of 1 lemon
- 1 tsp of honey
- 500g of new potatoes cut in half
- 2 tablespoons of olive oil
- 200g of cherry tomatoes, cut in half
- 150g of cooked king prawns (optional)
- Handful of green olives (optional)
- 1 courgette, cubed (optional)
Directions
- Preheat the oven to 200oC /180oC fan oven. Steam the potatoes for 10 minutes.
- Put the potatoes in a baking tray and drizzle with olive oil, roast for 10 minutes.
- Mix the harissa, 1 tablespoon of olive oil and honey together and coat the salmon fillets (skin side down).
- Add the salmon, the cherry tomatoes and the chopped courgette to the roasting tin and scatter over the lemon zest and crushed garlic.
- Roast for a further 10 minutes.
- Then add the prawns and olives and drizzle over the lemon juice
- Roast for further 5-10 minutes until the salmon is cooked through and the potatoes are crisp.
