Raw & Rustic (no bake) Caramel Bites
These Rustic Caramel Bites are a great idea for those who are finding it hard to kick their daily cake or chocolate bar.
These don’t contain any refined sugar, the sweetness comes from dates which won’t play havoc with your blood sugar
(You will need a food processor for this recipe)

Ingredients
- Base
- 45g of dates (pitted)
- 75g of mixed nuts or any nuts you have to hand
- 1 tbsp of melted coconut oil
- Pinch of sea salt
- Date Caramel
- 75g dates (pitted)
- 45ml maple syrup
- 40g nut butter (unsweetened)
- 25g melted coconut oil
- Topping
- 80g dark chocolate, more if you like a thick chocolate layer (I used 70% Lindt dark chocolate)
Directions
- Blitz the nuts in the food processor, then add the dates, melted coconut oil and sea salt and blend until combined.
- Line a square or rectangle tin and press in the mixture using the back of a spoon. Transfer to the fridge for 30 minutes.
- Wipe out the food processor bowl and then add all of the date caramel ingredients. Blend until combined and a thick caramel consistency has formed.
- Using two spoons, spoon the caramel over the base until evenly covered.
- Leave in the fridge to set for 2-3 hours.
- Melt the dark chocolate in a bowl over a saucepan of boiling water.
- Smooth over the caramel mixture ensuring fully covered. And place it back in the fridge again until set.
- Cut into squares when the chocolate has just set (to avoid cracking like mine!) and store in the fridge.
