Summer Mozzarella, Edamame beans, Parma ham & Asparagus salad

This salad makes the most of this combination of foods.

The salty ham and the creaminess of the mozzarella, coupled with zing of the mint.

You’ll want to make this over and over again!

Cook time & Preparation

  • Preparation and cook time: 15 mins
  • Serves: 2

Ingredients

  • 100g of frozen edamame beans
  • 1 bunch of asparagus
  • 1 pack of mozzarella (typically between 125-150g), shredded into bitesize chunks
  • 80g of Parma ham
  • Dressing: handful of mint leaves
  • 2 tbsp of apple cider vinegar or white wine vinegar
  • 4 tbsp of extra virgin olive oil
  • 1 tsp of runny honey
  • Salt & pepper

Directions

  1. Start by blitzing the dressing ingredients in a blender. Season with a pinch of salt and a couple of grinds of black pepper
  2. Steam the edamame beans and asparagus for about 3 minutes until tender but not too soft.
  3. Arrange the asparagus. mozzarella and parma ham onto a large plate and drizzle over the dressing
